Artisan company – Molly Woppy – is celebrating the 10th birthday of its iconic ‘Gingerman’ biscuit which has provided the ‘backbone’ for much of the company’s success.
From its home-based beginnings, Molly Woppy now carries a large and diverse range of sweet and savoury treats including gluten and dairy-free options, supplying product to quality food stores and the foodservice industry across New Zealand.

Despite the company’s gingerbread achievements, the company started out baking biscotti. Former chef Alistair Parker said he knew he was onto something when customers dining at the restaurant he worked at kept asking where they could buy the biscotti they had been served with their coffee.
“At that time, there was only a limited choice of biscotti available so we decided to meet the market head on and start making our own,” he said.
In partnership with Hayley Molloy, the duo cooked up a plan to make the biscotti at home and see how things went.
“When the first flavour of biscotti came out of the home oven it was an immediate hit. So we continued to juggle baking around raising two young boys and my fulltime chef role.”
After only six months, demand quickly outstripped the production capabilities of their conventional home oven so the couple bought a commercial oven and installed it in their dining room.
Their garden studio was soon converted into a full commercial kitchen and an employee was hired to sort and pack product.
Thirteen years later and the business which originally started in the couple’s home has steadily grown over the years. Located in Avondale, the Molly Woppy bakery currently employs over 20 staff and plans are afoot for continued growth to increase the size of the business over the next two to three years.
“Our customers have come to love and trust our brand and know that whatever a new Molly Woppy product may be, it will always be high quality and taste great.”
